CookingWithCaramel : Bourbon Chicken with Bacon, Bourbon and Black Pepper Bowties

My Rachel Ray Cookware Set came in on Saturday and I’m breaking it in today *salsa dances*

I’m going to make Bourbon Chicken with Bacon, Bourbon and Black Pepper Bowties. The Bowtie recipe comes from none other than Rachel Ray herself! Below is her recipe, but I plan on adding my own spin of this delicious looking dish!

1 tablespoon olive oil
1/2 pound pepper bacon, applewood-smoked, if available
2 tablespoons butter
2 large onions, chopped
Salt and freshly ground pepper
1/2 teaspoon ground thyme
1 large bay leaf
1 small Honeycrisp apple, peeled and chopped (optional)
1/3 cup bourbon
1 cup chicken stock
1 pound whole wheat farfalle
Grated Parmigiano Reggiano or Grano Padano cheese
