Who doesn’t like comfort food? When the weather is all types of chilly outside and you’ve been shoveling snow forever and two days, there’s something about some warm comfort food that just hits the SPOT! The other night I was in the mood for some warm my soul type of food, so I decided to make some chicken and dumplings with my crock pot. Here’s the recipe for this ah-mazing-meal.
4-6 chicken thighs or breasts (boneless if you have it) I didn’t have boneless so I’m going to give you the “boned” version
2 cans of cream of chicken soup
2 large finely chopped onions
4-6 large potatoes cut in quarters
3 finely chopped celery stalks
2 tablespoons of butter
2 cans of refrigerated biscuits
THAT’S IT!!!! Of course you need a crock pot/slow cooker.
Now you can put veggies of your choosing in the crock pot, carrots, peas, whatever…this recipe includes NONE of that, but feel free to experiment.
You’re going to take your chicken, clean it (no diswashing soap, I’ll share that story one day) and season it HOWEVER YOU WANT! I’m not going to tell anyone how to season their chicken because everyone has their own way. For this recipe I used the following:
Sylvia’s chicken seasoning
Red Cayenne Pepper
Once my chicken was all seasoned I threw it in the crock pot, covered it with onions and celery and chopped up potatoes
I’m a celery and onions fan so I threw a LOT in the pot. After mixing those ingredients in the crock pot, I put in the two cans of Campbell’s cream of chicken and covered the meat and potatoes with water and put two tablespoons of butter in there as well.
I like pepper 😆 so yeah you see pepper like everywhere. Mix up the cream and water and plug up your crock pot and let it cook for 5.5 hours. Be warned your house is going to smell like CHICKEN HEAVEN, but please do NOT be tempted to taste it because I don’t want you to die from salmonella poisoning and blame me for it, mmkay? So restrain yourself. Heck, I had to take a nap because the food was calling me. Anywho…When you hit 5.5 hours, take out the chicken (if you’re using boned chicken), and grab a plate and 2 forks and shred the chicken into pieces. After the chicken is shredded, put it back in the crock pot, and then take your refrigerated biscuit dough and plop them right into the cream/water concoction. The dough will get bigger and soak up the wonderful cream concoction and will cook itself into perfection.
Let that cook for another 45 minutes until the dough is no longer raw on the inside. Once the dough is perfect. DIG IN!!!!
This chicken and dumpling recipe will stick to your ribs and it is DEELICIOUS! If you have some Ritz Crackers in the house, use that as your spoon if you want. Yum Yum Yum deliciso-so 😀 Enjoy and tell me how you like it or what veggies you added and of course take pics!
