Beef cubes, rice, potatoes, corn, green beans, onions, peppers (red, green, jalapeño) seasonings & sofrito
Step 1: season your beef, put it in a pot and let it boil for an hour, pour sofrito (tomato sauce) & that will be your beef stock.
Step 2: While you’re letting your beef cubes boil, chop up your onions, potatoes, peppers in a bowl. Aren’t these colors just beautiful? I love color in my food!
Step 3: Pour the items from step 2 inside your pot and cook for about an hour.
Step 4: Enjoy! The beef and potatoes will be so tender that it will melt in your mouth. You can have biscuits on the side or Ritz crackers to eat along with the beef stew. It’s HELLA yummy.
Now if you want to convert this to a crockpot, you can. Take the seasoned beef along with the diced potatoes, onions, peppers and put it in the crockpot (same directions) and let it cook for about 2 hours on high. As you approach our 2, add the veggies, rice and corn in the crockpot, take notice if you need more water and then let it cook for another 1 and change.
